Oatmeal Raisin Cookies

Soooo I’ve actually started working in a cake shop for the last few months and though I’ve made a bunch of desserts at home, I haven’t photographed them or even remembered a bunch of the recipes I’ve used/modified. I’m going to try to get back on that, but between baking at home and work, posting online about recipe just seems to be the thing that gets cut. Here’s a post from a few months ago that I had queued up and ready to go.

Though my husband isn’t so big on chocolate, he loves his oatmeal raisin cookies. Last time I made them, I forgot to photograph them.

Chocolate Chip Cookie Cups

There is nothing more that I love than chocolate and gooey cookies. So, these chocolate chip cookie cups were an immediate must bake when I found them. They were nothing short of amazing, even though my husband though they had “too much chocolate.” Psh, says a guy who is just okay with chocolate. I, on the other hand, thought these were everything I had dreamed they would be.

Sugar Cookies with Marshmallow Fondant

I taught chemistry this spring and so for the final exam, one of the treats I made my students was periodic table cookies using a sugar cookie base, marshmallow fondant on top, with buttercream to write the symbols and the edging. I was more interested in making them look nice and work on the techniques, but they did end up turning out pretty tasty, as my students gobbled them up. I’ve attached some individual cookie pictures at the end if you want to see them, along with many pictures along the way.

Oreo balls (truffles)

It was the last lab time for the semester and I used it as review. I also made my students Oreo balls or, as I told them, if we’re fancy, Oreo truffles. These aren’t hard to make, with the occasional exception of dipping them if temperatures aren’t quite right, but they are pretty darned tasty. If you don’t like chocolate, these are too much. If you love chocolate, these are perfect for you.

“Two ingredient” cookies have been taking the world- or at least pinterest- by storm, so I thought I’d give them a try. I adjusted them a little and tried them two different ways. Chocolate chips made them okay, but I have to admit that adding some brown sugar made them really seem like cookies and still be pretty healthy (top with brown sugar, bottom picture without). No surprise, in recent months since I made these, more and more ingredients have been added to them (peanut butter, cinnamon, coconut oil) because without oil or sweetness, they’re just a tad too bland.

Pumpkin Spice Chocolate Chip Cookies

I have a crazy love of anything pumpkin- long before pumpkin became popular. I also love chocolate chip cookies. These are a perfect marriage of the two. The outside is just slightly crunchy while the center is nice and gooey. I make these many times in the fall- and a few other times during the rest of the year.
