Pumpkin Spice Chocolate Chip Cookies

I have a crazy love of anything pumpkin- long before pumpkin became popular. I also love chocolate chip cookies. These are a perfect marriage of the two. The outside is just slightly crunchy while the center is nice and gooey. I make these many times in the fall- and a few other times during the rest of the year.

Makes: 24 cookies

1/2 cup sugar
1/2 cup brown sugar
2 Tbsp melted butter
1 egg white
2 Tbsp pumpkin puree
1 tsp vanilla extract
1/2 cup whole wheat flour (you can use all purpose too if it’s all you have, making 1 c total)
1/2 cup all purpose flour
1/4 tsp baking soda
2 tsp pumpkin pie spice (though I tend to go a little heavy with this and add more)
1/8 tsp salt
1/2 cup chocolate chips

1) Preheat the oven to 350 degrees. Spray with baking spray or line with silicone liners two cookie sheets.
2) With a stand or hand mixer, mix both sugars, butter, egg white, pumpkin, and vanilla together.
3) Add in the flours, baking soda, pumpkin pie spice, baking soda, and salt and mix until evenly blended.
4) Stir in the chocolate chips.
5) Drop heaping teaspoons onto the cookie sheets. Bake for 8-10 minutes.
6) Remove from oven and let cool a couple minutes before putting them on a cooling rack.
