Banana Sheet Cake

I had a bunch of bananas left over that were getting pretty ripe. Although I love banana bread, I wanted to make something different. I found a banana sheet cake recipe that looked promising and decided with a nice coating of cream cheese frosting, it would hit the spot.

Adapted from: Laura’s Sweet Spot (cake only)

Makes: 1 9×13 pan

Ingredients:
Cake:
1 1/3 cup sugar
1/4 c softened butter
1 cup plain greek (or any other) yogurt
2 large eggs
4 overripe bananas, mashed
2 tsp. vanilla
2 cups flour
1/2 tsp. salt
1 tsp. baking soda
Frosting:
1/2 cup butter (1 stick)
4 oz cream cheese
3 cups powdered sugar
1 tsp. vanilla

Directions:
1) Preheat oven to 375 degrees F. Spray a 9×13 pan with nonstick cooking spray.
2) Cream the butter and sugar together. Add the yogurt, eggs, bananas, and vanilla and mix.
3) Add the flour, salt and baking soda, mixing until just combined.
4) Bake for 25-30 minutes, checking with a toothpick in the middle until it comes out clean.
5) Let cool completely before frosting. Mine came out with the edges looking a little crispy and the crust a little spongy, so I cut the sides and top layer off to give a better mouth feel to the cake and a flat top surface.

6) For the frosting, beat the butter and cream cheese together. Slowly add in the powdered sugar until desired consistency. Add in the vanilla. Frost the top of the cake.
