banana bread

This is one of my most commonly made recipes. My husband loves it and it’s pretty healthy! It makes a great breakfast or mid morning snack.

Notes: I almost always omit the nuts because I’m not a big nuts in my bread kind of person and I halve the recipe to make one loaf instead of two. Other than that, I follow this recipe straight ahead.

Makes: 1 loaf

Ingredients:
4 very ripe medium bananas
1/4 cup unsweetened applesauce
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons softened butter
1/2 cup brown sugar
2 large egg whites
1/2 teaspoon vanilla extract

Directions:
1) PreheatĀ oven to 350Ā°. Coat a loaf pan with baking spray.
2) Mash the bananas and add the applesauce, egg whites, and vanilla.
3) Cream with butter and brown sugar in the bowl of a stand mixer. Add the banana mixture and mix until thick, scraping down the sides.
4) Add the flour, baking soda, and salt and mix until just combined.
5) Pour the batter into the prepared pan. bake for about 50 minutes, until a toothpick inserted near the center comes out clean.
6) Put the pan on a wire rack and cool until room temperature before slicing.
