Basic Buttercream frosting

peanut butter frosting strawberry frosted vanilla cupcake 030213I also made a basic buttercream with add ins of peanut butter and strawberry jam for the shower cupcakes.

Notes:
(Same as for cream cheese frosting.) I made a double batch of this and then split the frosting in half before adding caramel or jam. To pipe the frosting, I put the frosting in plastic sandwich bags, snipped the edges, and squeezed the frosting out the newly formed hole. The larger you cut the hole, the more that will come out, so cut based on how you want the frosting to look.

Makes: enough to frost 50 mini cupcakes or 24 regular cupcakes (plus a little extra)

Ingredients:
1 c butter
4 c powdered sugar

Add ins:
1 c peanut butter
1/2 c strawberry jam

Directions:
1) Beat the butter well to smooth out.
2) Add in powdered sugar 1 cup at a time until stiff or desired consistency. If stopping here, add 2 tsp vanilla to flavor.
3) Add in either 1 c peanut butter or 1/2 c strawberry jam. Adjust powdered sugar to thicken back to piping consistency. Again, only the jam needed additional powdered sugar. If the mixture seems too thick, add some milk or cream to thin the mixture.
4) Pipe on to cupcakes. You may need to put in the fridge for 15-30 minutes to thicken up if the mixture became warm and the butter started to melt.
