Fudgy Snow Balls

This is a no bake recipe that I’ve nabbed again from Gina of Skinnytaste. I was making so many high fat and high sugar cookies that I wanted to find something a little safer to snack on. 

Makes: 20 balls

Adapted from: Skinnytaste


15 pitted dates
2/3 cup unsweetened cocoa powder
1 cup whole roasted unsalted almonds (I used about 3/4 c almond flour that I found at Trader Joes. It saved a step!)
1 tbsp honey
2 tbsp water
3 tbsp confectioner’s sugar


Pulse the almonds in a food processor until ground OR use almond powder. Add dates, cocoa powder, honey, and water to the food processor. Pulse again until it forms a sticky mass. If it seems too dry, add a little water, 1 tsp at a time.

With clean, damp hands, roll 1 tbsp of the dough into a ball. You may want to run your hands under the sink in between ablls, but I just waited until the end and had some very coated palms. Set balls on parchment paper.

Put confectioner’s sugar in a bowl. Roll the balls in the sugar and tap off excess. These can be stored in to the fridge for up to a week.


These came out really well without any modifications. They are chocolatey without being over the top and the date is barely noticable. I will be making these again as long as I can keep finding dates, which was my biggest problem.
