Pumpkin Spice Cookies

These pumpkin spice cookies are adapted from my favorite healthy eating blog, Skinnytaste. I use Gina’s recipes from that blog often for cooking dinner, but she occasionally puts up some baking recipes and they have so far been pretty amazing! She’s also takes amazing pictures of her food, to which I can only hope to one day to achieve, but for now I’ll stick to trying to get the baking part down!

These are definitely a more cake-y cookie, but quite tasty still.

Makes 30-35 cookies


4 oz cream cheese, softened
2 tbsp unsalted butter, softened
3/4 cup brown sugar, packed
1/4 cup sugar
1 egg
1/2 cup pumpkin puree
1/4 cup milk
1/2 tsp vanilla extract
1 3/4 cup all purpose flour
1/2 tsp pumpkin spice
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt


Preheat oven to 350 degrees. Spray cookie sheet with cooking spray.

Cream together cream cheese, butter, sugar, and brown sugar until mixed and fluffy. Add in egg, pumpkin, milk, and vanilla and mix well.

Mix together all dry ingredients (flour, pumpkin spice, baking soda, baking powder, salt) in another bowl and slowly add in or (my lazier, not wanting to make more bowls dirty method), add half flour, then add pumpkin spice, baking soda, baking powder, salt, and finally the last of the flour.

Spoon by heaping teaspoons on to the sprayed cookie sheet and bake about 12 minutes or until the bottoms are golden. Remove to cooling racks.

Notes: Gina calls for a chocolate drizzle, which I omitted for easier stacking and transportation. I’ve also in the past substituted it with a cream cheese drizzle icing, which is also amazing on these cookies.
