Lazy Cake Cookies

My fiancee sent me a link a little while ago for ‘lazy cake cookies’ (from I’m a lazy mom) and asked me to make them some time. They seemed rather simplistic to me, but I kept it around for when I was in a rush. Yesterday at 4 pm, he said he found out it was a coworker’s birthday today and asked if there was any way I could whip something up. I thought of this and remembered I still had DIY cake mix left over from cupcakes I made last week.

I made only a few modifications (since there weren’t many to make as it was a pretty simple recipe) and the result was great!

*Updated* Basic Brownies

*I’ve updated this recipe with how I make it now and a new picture. I make these all the time and rarely remember to grab a picture because the brownies are gone so fast! I love these brownies so much that I can’t hardly stand it.*

This isn’t the first time I’d made brownies, but it has become my go to quick brownie recipe. It is adapted from one of my favorite baking blogs, the Brown Eyed Baker.

BBA sticky buns

I spotted the book The Bread Baker’s Apprentice by Peter Reinhart on a friend’s cookbook shelf back in February, right around the time I was really thinking about kicking up my baking habits several notches. It seemed like it could teach me some good recipes and generally improve me as a baker. I bought it pretty soon after that and have made a couple of the recipes since. Even if you follow the recipe as I have it, I highly recommend that you buy this book as he gives many more tips through out the book, ingredient alternatives,  and mass measurements, which are essential for many of his recipes.

Cookies and Cream Cupcakes

Ah, the recipe that started it all. I pulled recipes from three different websites (at least!) to make these cupcakes after my fiancee requested cupcakes with Oreo truffles that I’d previously made inside. I realized how hard it would be to refind all of those recipes to make them again, so I finally broke and decided to start blogging my recipes.

Unfortunately, these were all eaten up before I could take some pictures, but they looked similar to the ones from love in the oven, where I gathered together some of the recipes and ideas.

Pumpkin Spice Cookies

These pumpkin spice cookies are adapted from my favorite healthy eating blog, Skinnytaste. I use Gina’s recipes from that blog often for cooking dinner, but she occasionally puts up some baking recipes and they have so far been pretty amazing! She’s also takes amazing pictures of her food, to which I can only hope to one day to achieve, but for now I’ll stick to trying to get the baking part down!

I’ve always loved baking and in the past year, I’ve increased how much I’ve been baking, whether it be breads, bagels, or amazing desserts. Now I’ve hit the point where I can’t remember which recipes I’ve used, how I’ve modified them, and where to find them! My new mission is to blog my recipes as I go with pictures, mainly for myself, but maybe for someone else too!
